If you don't mind some adrenaline, you could find a parachuting club at Habonim Beach and their number is 04 6391068. And if you wanna see Israel from the air, try Moon Air Flight. They offer flights over the whole country for tourists. You'll find them at Herzliya Airport, and the number is 09 9587280.
